- Preheat oven to 240ºC. Bring meat to room temperature 30min before cooking.
- Roughly chop the onions and carrots. Break the garlic blub into cloves, leave them unpeeled.
- Pile all the vegs and the herbs into the middle of a roasting dish and drizzle eith olive oil.
